Here's a small experimental lot from a group of columbian producers that cautiously followed all the steps for an exceptional coffee. A special attention was given to the sorting after the harvest, in order to get an even level of maturity and to ensure that only the the best cherries make it to the drying phase. Coffee was dried on raised beds for about 22 days.
