This is the first time we've offered a coffee with a natural drying process that isn't very fruity. This one is very approachable, leaning more on the classic side than the bold side. Creamy notes of milk chocolate and stewed apple. A well textured coffee.
José, was born in the heart of the coffee region of Huila and his farm El Mirador. He works tirelessly to produce specialty coffees, which he does with the help of his family and by employing local people. In this way, his farm is a source of employment and an example for other coffee producers.

NATURAL DRYING PROCESS
In the specialty coffee business, the cherries are harvested by hand and only when ripe. Once picked, the cherries are sent to drying stations. The dry method (natural) consists of letting the whole cherries ferment on the beans. During 10 to 30 days, depending on the region, the coffee cherries are spread out and dry quietly in the open air.
At the end of the drying process, the cherries are dehulled to keep only the green beans. The long fermentation of the cherries on the bean offers to the tasting pronounced notes of fruits - red fruits - vivid and ripe.
