Hendri. Its goal is to improve the income of local producers through innovative farming and processing practices. Today, more than 110 small producers take part in the project.\u003c\/p\u003e\n\u003cp\u003eThe coffee trees are grown in a traditional agroforestry system, under the shade of fruit and forest trees. This approach supports biodiversity, protects the soil, and contributes to the quality of the harvested cherries.\u003c\/p\u003e\n\u003cp\u003eFor this lot, the cherries were depulped, then fermented with the integration of Nira yeast for 48 hours. They were then washed and dried according to a traditional washed coffee approach.
