TASTING PROFILE
This natural lot surprises with its complexity, creating a luxurious atmosphere of royal blue fruit. From the initial sip, a note of concord grape emerges on the palate, culminating in the sweet essence of candied whortleberry as the acidity harmonizes with the sugar in the cup. The finish reveals a natural Ethiopian coffee from a more delicate perspective, reminiscent of cocoa nibs or even black tea.
ORIGIN
This coffee originates from the efforts of 450 local growers situated in the Guji region, close to the Buku Sayisa washing station. The cherries underwent a natural processing method, fermenting for 36 to 72 hours in a water tank before being transferred to raised beds for drying, a process lasting 7 to 10 days.
