    TASTE

    A soft and bright Ethiopian cup with gentle fruit sweetness. On the nose, a hint of lemon pie and vanilla sets the tone. In the cup, silky pineapple notes unfold first, followed by a round, fruity body reminiscent of ripe mango flesh. The texture is smooth and comforting, with a sweetness that lingers without feeling heavy. The finish carries vanilla, tropical fruit and a light pastry warmth, evoking a delicate and uplifting dessert.

    ORIGIN 

    For over a decade, Matte Matosa has earned a reputation as a forward-looking producer in Sidama. Known for embracing new varieties and trial selections from research stations, he blends innovation with heritage in a region celebrated for its coffees. Together with his wife, Tsehaynesh Girma, and their ten children, four of whom are active on the farm, Matosa manages a family project built on effort, commitment and shared pride. Each harvest, their work is supported by seasonal pickers who join the family in bringing the crop to completion.

    BREWING

    This coffee shines in manual brewing, where its layered character shows clearly. It also makes a pleasantly balanced espresso, with yellow fruit sweetness and a comforting body that can evoke washed profiles. In milk drinks, it adds a soft texture and brings forward its gentle vanilla finish. We especially enjoy it as filter for the clarity it offers, but it also suits formats like flat whites and cortados, where its mellow nature pairs naturally with milk.

    Espresso parameters :
    Ground coffee : 18 g
    Result in the cup 42 g in 30-32 sec.

    Filter parameters :
    Dry coffee : 15 g
    Result : 220 g at 94°C.
