TASTING
A coffee that's both tropical and comforting! The cup is dominated by yellow fruit notes, with a subtle balance between sugar and sweet acidity, worthy of Francy Castillo's coffees. Tropical aromas take center stage, but the cup remains rich and textured, contrasting with its bold taste. A hint of yuzu lemon at the start, followed by a lovely sweet note of papaya and a tangy touch of cherry, creates an irresistible ensemble of flavors!
ORIGIN
Francy and her four sisters grew up helping their parents on the coffee farm, which inspired her to specialize in agronomy to support and manage the family business. She earned her university degree through distance learning while working on the farm to pay for her studies. After graduating in 2019, she began working at FNC as a field assistant in her hometown of Arboleda, Nariño. She also gained experience in sensory development while working in a private export laboratory in Buesaco. Francy writes: "My goal is to be able to reach the world with coffee from our family farm, and especially to share the coffee from our community in Arboleda." Needless to say, the fruits of her efforts have led to the discovery of some incredible batches of coffee, and her expertise has enhanced their taste experience.
This batch of Caturra variety was harvested at an altitude of 2,018 meters above sea level. It underwent a washing and fermentation process to achieve a clean, transparent taste profile, highlighted by a tropical touch. The cherries were then dried in a mechanical dryer and matured on patios for 16 days, until the beans reached the optimal moisture content.
DRINKING
This coffee is particularly suited for filter brewing, and given its complex and delicate nature, we recommend manual extraction as the best approach. For the more adventurous, espresso can be a rewarding challenge, offering the chance to bring its aromas to life. It's an expression of premium terroir that leaves no one indifferent when properly extracted. While older methods, such as the French press or the Italian coffee maker, may not deliver as much clarity in the aromas, they will reveal a more comforting aspect of this coffee. As for milk-based beverages, expect explosive and bold flavors with this espresso!
