    TASTE

    A flavourful coffee that perfectly embodies the Mexican terroir! In the cup, a juicy and layered texture unfolds malic notes of red apple and dried grape. Its pleasant sweetness evokes maple syrup, while its complexity reveals bright hints of bergamot and sweet grapefruit. An experience that both challenges our expectations and celebrates the comforting warmth of this beloved Nektar origin

    ORIGIN 

    This lot brings together the harvests of the San Isidro community, Zoquiapam, Red 5 de Diciembre. The network was born in 2014, in the midst of the crisis caused by coffee leaf rust (roya), which had devastated the region and discouraged international buyers. On that December 5th, thirteen community groups united 1,300 small Indigenous producers under one organization.

    Over the following six years, members focused on selective harvesting and the processing of specialty coffees, gaining both expertise and new members. Certified organic, they only began receiving true quality premiums in 2020, thanks to a partnership with Ensembles de Café. Under their guidance, producers started isolating their best lots, laying the foundations for a quality model that still defines the network today

    DRINKING

    This coffee truly shines as an espresso, feels like liquid velvet in milk-based drinks, and offers a nuanced and complex experience as a filter brew.


    Each method reveals a distinct personality:

    • Espresso: a well-balanced bite reminiscent of a classic 1:2 extraction, with almond-like texture and an elegant balance between sweetness and acidity.

    • Milk-based beverage: pure comfort, led by warm red apple notes that create a cup both complex and soothing.

    • Filter: syrupy and deep, highlighting the aromatic richness of Mexico, perfect for slow sipping or creative coffee mixology.
