    TASTE

    Comfort returns to our cups. This washed Bolivian lot welcomes us gently with the warm aroma of cashew. Its light body then reveals the sweetness of raisin, lifted by the bright fruitiness of red plum. The cup gains complexity as it cools, revealing a profile that is at once classic, distinctive and unmistakably Bolivian.

    ORIGIN

    Part of Agricafé’s “Sol de Mañana” project, this lot is the result of Wilfredo Calisaya’s work. Its meticulous washed process begins with depulping, followed by more than 48 hours of fermentation in water. This step completely removes the mucilage surrounding the beans before they are traditionally dried.

    DRINKING 

    Opposites complement each other. As an espresso, this coffee offers a round and comforting cup, carried by the aromatic softness of cashew and a pronounced sweetness reminiscent of raisin. Add a little steamed milk and its warm, comforting character becomes even more pronounced.

    As a filter coffee, its light, tea-like texture allows the flavours to become more defined as the cup cools. Red plum gradually comes forward, revealing the coffee’s juicy, fruit-forward side. A cup that unfolds gently and becomes even more expressive as it cools.
