TASTE
From the first sip, this coffee opens with a vivid and generous impression of candied cherries, carried by a bright, sparkling acidity. The cup is deep and silky, with a dense sweetness reminiscent of fruitcake and macerated fruit.
As it develops, the profile gains roundness and warmth, revealing an enveloping finish of baking spices and holiday desserts. An expressive, intense and indulgent coffee that fully embraces its fruit-forward character.
ORIGIN
Mahataman Coffee Bajawa is a specialty coffee project founded in 2016 in Bajawa by Ikang M. Hendri, with the goal of improving local producers’ income through more innovative farming and processing practices. Today, more than 110 smallholder producers take part in the project.
The coffee trees are grown in a traditional agroforestry system, shaded by fruit and forest trees. This approach supports biodiversity, contributes to soil health and reflects a more sustainable relationship with the land.
For this lot, the cherries were dried using a natural process with the addition of yeast at the beginning of fermentation. This approach helps support the coffee’s aromatic development in a context where nights can be cool at higher elevation. The result is a coffee that remains true to its terroir while being lifted by a denser, sweeter and especially expressive profile.
BREWING
As espresso, this Flores is lively, fruity and brilliantly bright. It offers an intense cup, marked by candied cherry and a beautiful aromatic tension. In milk, it becomes rounder and more dessert-like, with a creamy texture that highlights its notes of candied fruit and sweet spices.
As filter, it reveals its full complexity: cherry leads at first, then the cup evolves toward fruitcake, spices and a warm finish as it cools.
A flamboyant and indulgent coffee, halfway between a fruit bomb and a spiced dessert.
